General description

デキストランは、D-グルコピラノースからなる細胞外細菌ポリマーです。大部分は、主鎖のα-(1→6)結合と、α-(1→2)、α-(1→3)、α-(1→4)の各数の分岐結合で構成されています。
デキストランは、グルコース単位がα(1→6)結合した直鎖と、α(1→3)結合で生じた分岐で構成されている分岐グルカンです。デキストランのサイズは10,000～150,000 Kdの幅があります。デキストランは、増量剤、安定剤、マトリックス成分、結合プラットフォーム、潤滑剤、および物理的構造要素としての用途に使用されます。低分子量デキストランは、高分子量デキストランと比べて、それらの粘度、凝集および透過特性のためにしばしば好まれます。

Application

Leuconostoc spp由来デキストランは、以下の用途に使用されています：
  • カゼイン塩の糖化による、グルコースと比較した糖鎖長伸長の影響調査
  • 銀ナノ粒子（AgNP）の特性評価のための、マトリックス支援レーザー脱離イオン化-飛行時間型（MALDI-TOF）質量分析の質量校正
  • 三酸化タングステン（WO3）ナノ粒子のin vivo投与を評価するための非毒性安定剤として

Biochem/physiol Actions

デキストランは、特に医薬品の血漿増量剤として使用されています。また、食品、医薬品、化学産業で、アジュバント、乳化剤、担体、安定剤としても役立ちます。Sephadexは、タンパク質の分離と精製によく使われる架橋デキストランです。食品産業では、ジャムやアイスクリームの増粘剤としてデキストランを利用することもできます。糖の結晶化を防ぎ、水分の保持力を高めます。これにより、いろいろな食品の風味と外観を保ちます。
