γ-Glutamyltranspeptidase is used in the food industry to improve the umami taste of soy sauce.

Biochem/physiol Actions

γ- Glutamyltranspeptidase cleaves theγ-glutamyl amide bond from glutathione and its S-conjugates to remove glutamate.
