General description

D-Psicose protects and preserves pancreatic β-islets through the maintenance of hyperglycemia and by the prevention of fat accumulation in Otsuka Long-Evans Tokushima Fatty rats.

Application

D-Psicose has been used in a study to assess the bioconversion of D-fructose to D-allose. It has also been used in a study that investigated the characteristics and antioxidant activity of maillard reaction products.

D-Psicose is a hexoketose monosaccharide sweetener, which is a C-3 epimer of D-fructose and is rarely found in nature. It has 70 % relative sweetness but 0.3 % energy of sucrose, and is suggested as an ideal sucrose substitute for

D-Tagatose 3-epimerase epimerizes D-fructose to yield D-psicose, which is a rare sugar that exists in small quantities in nature and is difficult to synthesize chemically. We aim to explore potential industrial biocatalysts for commercial-scale manufacture of this rare sugar. A
