Biochem/physiol Actions

Diastase is a mixture of α-and β-amylase and is found in honey. It mediates glycogen digestion and catalyzes the breakdown of starch to maltose. Diastase is used as a reducing and stabilizing agent in the aqueous synthesis of gold nanoparticles (AuNPs).

Appearance: slightly brownish powder

ß-Amylase(starch, pH 4.8; 25 °C): about 100
Note: Sulfatase and phosphatase detectable. Suitable for the determination of thiamine (Vit. B1) in food.
