Biochem/physiol Actions

L'acide L-ascorbique joue un rôle dans la production des neurotransmetteurs ainsi que dans la synthèse de la carnitine et du collagène. L'acide ascorbique est un cofacteur enzymatique de nombreuses enzymes, jouant le rôle de donneur d'électron pour les monooxygénases et les dioxygénases. L'acide ascorbique est également un antioxydant puissant, surtout vis-à-vis des espèces réactives de l'oxygène. La vitamine C possède des propriétés antioxydantes. Elle contribue à protéger du photovieillissement et du vieillissement naturel. Un déficit en vitamine C provoque le scorbut, des saignements gingivaux, des troubles de la cicatrisation, une anémie et une dégénérescence musculaire.

General description

L'acide ascorbique, également appelé vitamine C, contient une lactone à six atomes de carbone qui est produite par les plantes et certaines espèces animales, mais pas par l'être humain et les autres primates. La vitamine C est une vitamine hydrosoluble. Elle est présente dans les agrumes, la groseille à maquereau, le brocoli, la fraise ou le chou de Bruxelles. L'acide L-ascorbique est la forme biologiquement active de l'acide ascorbique. Il est instable et hydrophile. L'acide ascorbique porte une charge neutre ; il se transforme en ascorbate par protonation.
