Biochem/physiol Actions

El ácido L-ascórbico desempeña un papel en la producción de neurotransmisores, carnitina y síntesis de colágeno. El ácido ascórbico funciona como un cofactor enzimático de múltiples enzimas, y actúa como dador de electrones para las monooxigenasas y las dioxigenasas. El ácido ascórbico también funciona como un potente antioxidante, en particular en lo que respecta a las especies de oxígeno reactivo. La vitamina C exhibe propiedades antioxidantes. La vitamina C contribuye a conferir protección contra el fotoenvejecimiento y el envejecimiento. La carencia de vitamina C está asociada con el escorbuto, el sangrado de encías, la mala cicatrización de las heridas, la anemia y la degeneración muscular.

General description

El ácido ascórbico se conoce también como vitamina C. Contiene una lactona de seis carbonos producida por las plantas y algunas especies animales, pero no por los humanos ni por otros primates. La vitamina C es una vitamina hidrosoluble. La vitamina C forma parte de los cítricos, como la grosella espinosa de la india, el brócoli, las fresas y las coles de Bruselas. El ácido L-ascórbico es la forma biológicamente activa del ácido ascórbico. Es inestable e hidrófilo. El ácido ascórbico tiene una carga neutra, lo que permite que se convierta en ascorbato por protonación.
