内在性の抗酸化物質であり、細胞代謝や呼吸性バーストによって生じた活性酸素種の除去において重要な役割を果たしています。GSTは、生体異物やロイコトリエン、そのほか求電子中心を有する分子とグルタチオンとの間で生じるグルタチオンチオエーテルの形成を触媒します。グルタチオンはまた、タンパク質中のシステイン残基とジスルフィド結合を形成します。これらのメカニズムのため、グルタチオンは抗がん剤の効果を低下させるという逆の作用を示す場合があります。
