General description
オボムコイドまたはトリプシンインヒビターは、大部分の鳥類の卵白に豊富に存在するタンパク質です。鶏卵タンパク質は、約186個のアミノ酸残基からなり、高度にグルコシル化されています。3つのタンデムドメインはそれぞれ、膵臓トリプシンインヒビターと相同です。極めて免疫原性が高く、おそらく卵アレルギーの大部分の症例の原因であると考えられます。

1トリプシンユニットは、BAEEを基質として用いる場合、pH 7.6、25°C、1分間に、ΔA253が0.001となる酵素量です(反応液量 = 3.2 mL、光路長 = 1 cm)。

Application
ニワトリ卵白由来のトリプシン阻害剤は以下の用途に使用されています：
- タンパク質分解反応を止めるため
- 網膜の分離に用いる細胞懸濁液を粉砕するためのOVO-1溶液に
- 皮質の分離に用いるリン酸緩衝生理食塩水に
Biochem/physiol Actions
オボムコイドはトリプシン阻害因子活性を有します。免疫グロブリンE（IgE）と結合できる複数の立体構造的および直線状エピトープを有し、熱およびタンパク質分解に対して高い安定性を示します。
