Application

La gelatina de piel de peces de agua fría se ha utilizado en un medio de incubación (IM) en el inmunomarcaje de cortes de cerebro de rata, como componente del tampón de enjuague en la inmunotransferencia Western de diversas células, como bloqueante en la tinción inmunofluorescente de las células HeLa.
Se utiliza como un agente de bloqueo en inmunoquímica.

General description

La gelatina es una mezcla heterogénea de proteínas hidrosolubles de elevados pesos moleculares promedio, presentes en el colágeno. Las proteínas se extraen hirviendo la piel, los tendones, los ligamentos, los huesos, etc. en agua.
La gelatina procede del colágeno y es la proteína más abundante en la matriz extracelular (MEC) de los tejidos. Es un material bioactivo. La gelatina consiste en secuencias de proteínas sensibles a las metaloproteinasas de la matriz (MMP).

Type B has 100-115 millimoles of free carboxyl groups per 100 g of protein and a pI of 4.7-5.2.
