Biochem/physiol Actions

ピルビン酸はアルドール縮合によりN‐アセチルマンノサミンと反応しシアル酸を生成します。ピルビン酸は市販されている紅藻由来多糖類の成分の一つです。筋肉では、ピルビン酸（グリコーゲンから遊離される）は運動中に乳酸に還元され、乳酸は休息中に再酸化され一部は再びグリコーゲンに変換されます。
