ラクトビオン酸は、抗酸化剤および安定化・ゲル化剤としての役割を果たします。食品や医薬品の成分として使用されています。
ヒドロキシルラジカルの生成を阻害することが報告されています。マトリックスメタロプロテイナーゼ（MMP）の潜在的な阻害剤。食餌性代謝に耐性がありますが、ラットの腸のカルシウム吸収を促進します。
